Zuchinni anyone?

Do you have a garden?  Does your garden have zucchini in it?  Do you ever run out of ideas as to how to use that zucchini?  I have a wonderful recipe for you!

This bread is sooo good and chocolate to boot!  Now your kids will love to eat their veggies.

LOW CALORIE CHOCOLATE ZUCCHINI BREAD

3/4  cup sugar
1/3  cup margarine, softened
1-1/2 tsp vanilla
1     egg plus 1 egg white
1-1/3 cup unbleached flour
2     Tbs wheat germ
2     Tbs unsweetened cocoa powder
1/4   tsp salt
1/2   tsp baking soda
1/2   tsp cinnamon
1/8   tsp baking powder
1      zucchini, about 1-1/2 c. shredded (press out moisture)

Cream together sugar and margarine.  Add vanilla and egg.  Beat well.  In separate bowl, combine dry ingredients.  Add to sugar mixture and mix well.  Stir in zucchini and pour into a 9x5 loaf pan which has been sprayed with nonstick spray.  Bake for about 1 hour (check at 50min) or until pick comes out clean.  Cool in pan for 10 min. then turn onto wire rack to cool completely.

This is great for a snack or for breakfast.  Serve it warm with home made vanilla ice cream!  I hope you enjoy this recipe!

Well that do beat all Miss Vicki....zucchini chocolate bread!! Who would've thought...I must add this to my list of must do recipes.

I agree...chocolate zucchini bread! For some reason, the idea cracks me up...but I'd be the first to try a bite.

Mum used to make zucchini cake all the time when we were kids. I still make that recipe. It is a family favourite, even though we used to say the raw mixture looked like green sick. Maybe the grossness was what we liked when we were kids.
